We are four moms busy with young children. So, we decided to form a dinner co-op. Each of us has one designated day per week on which we cook a strictly vegan dinner for all four families and deliver to them. Each person only cooks on the one day but enjoys four freshly cooked dinners each week. This blog is a tool we will use, as desired, for presenting recipes and sharing information.

Snobby Joes
I used PPK's recipe for Snobby Joes (aka sloppy joes) for the base of this week's meal.
Served with buns, edamame salad and canteloupe.
I might tone down the spice next time b/c my kids actually ate them but found them a wee bit spicy.
Thanks for the recipe. Both my kids ate them, to my astonishment. Josh asked if there was enough leftover for tomorrow night! The benefits of this co-op may be more than I bargained for.
We all loved these, even Casper! I have some great pictures of him covered in sloppy joes up to his eyeballs :) I think this is the first food that inspired him to be so gung-ho at dinnertime.
Rory liked them too but she hit a spicy pocket at one point and cried (after she'd already eaten about half a joe's worth). Erin said they were spicy right off the bat. I thought I might just set a little aside next time and tone down the chili powder.
